Hearty and Healthy Keto Beef and Vegetable Soup




Who doesn’t love a nice,  hot bowl of soup during the winter months? Today,  I thought I would post one of my favorite recipes of all time so you can share it with your loved ones,  or invite a group of fellow keto  pals,  or simply have a couple of servings and freeze the rest so you can enjoy later in the week.  


This hearty and healthy keto beef and vegetable soup is the perfect comfort food for a cold winter day. 


It's packed with flavor and nutrients, and it's also low in carbs and high in protein and fat. 


This soup is a great way to stay on track with your keto diet while still enjoying a delicious and satisfying meal.


I have shared the recipe below for you to try out. 


Ingredients

  • 1 pound of beef stew meat

  • 1 tablespoon of olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 4 cloves of garlic, minced

  • 1 teaspoon of dried oregano

  • 1/2 teaspoon of dried thyme

  • 1/4 teaspoon of black pepper

  • 4 cups of beef broth

  • 1 cup of chopped kale

  • 1/4 cup of chopped fresh parsley

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.

  2. Add the onion, carrots, celery, and garlic to the pot and cook 1 until softened.  

  3. Remove beef from the pot and set aside.

  4. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.

  5. Stir in garlic and cook for 1 minute more.

  6. Stir in the oregano, thyme, and black pepper.

  7. Add the beef broth to the pot and bring to a boil.

  8. Reduce heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the beef is tender.

  9. Add the kale and parsley to the pot and cook for 5 minutes more.

  10. Serve hot.

Tips

  • You can use any type of beef stew meat you like.

  • If you don't have beef broth, you can use chicken broth or vegetable broth.

  • You can add other vegetables to the soup, such as mushrooms, zucchini, or bell peppers.

  • You can also add a can of diced tomatoes or a can of tomato sauce to the soup.

  • If you want a thicker soup, you can stir in a tablespoon of cornstarch mixed with a tablespoon of water.

Nutrition Information

This soup is a great source of protein, fat, and vitamins. It is also low in carbs and calories. One serving of this soup contains approximately 200 calories, 20 grams of protein, 10 grams of fat, and 5 grams of carbohydrates.
